Tobiko is the roe, or eggs, of flying fish. It has a mild flavour and pops in your mouth. It is milder than caviar and adds colour, flavour and texture to sushi.

Nikiri sauce is used as a finishing touch for nigiri, sashimi and maki. It’s what chefs brush on nigiris before serving. Follow my easy recipe and make your own.

Uni are sea urchin gonads. That’s right – gonads. Uni is buttery, sweet, umami, salty, delicious! Use them as a nigiri topping, in sushi rolls or add nikiri sauce and eat them straight up.
